OUR Summer Vacation

Last Tuesday, we went home to San Antonio to visit my parents (and to eat at some food places that we have missed). We arrived back to our Minnesota house yesterday. 

We had originally thought of visiting in April, as Niko had a few days off from school, and we would take him out for the rest of the week, but he had a lot of prior absences from school, so that wouldn’t work. School ended on May 28th, and he had a week of doing nothing, and then the following week, we left!

Niko did awesome at the airports and in the planes. Food and drinks, both in the airport and the airplane, and he was glued to the screen in the airplanes as he had bluetooth headphones to watch Mr. Beast videos!

At my parent’s house (where we stayed), we requested bagels and tuna (as my mom makes it perfect). Their fridge and pantry is always stocked, and Nina and I even had a grocery store deliver some of our favorites before we arrived. My dad is a master griller and one night he grilled hamburgers, turkey burgers, and hot dogs and another night, he grilled steaks.

It was funny because every time I looked at Niko, he had a happy grin. Why? Well, let’s just say, we weren’t saying no to snacks! Niko even cut a block of cheese with my mother, and he made his own deli sandwich twice.

For me, there were three places I wanted to eat at. One was a local Mexican restaurant called Las Palapas, and we drove through on Tuesday on the way to my parents. Bacon and egg breakfast tacos, chicken fajita tacos with grilled onions and avocado, cheese enchiladas, chicken tortilla soup, and chicken soup. Another place was a local Chinese restaurant called Golden Wok. Fried dumplings, beef fried rice, and combo lo-mein noodles. So far, two for two, and those places hit the spot! For the third, it was another local Mexican restaurant called Taco Cabana, and unfortunately, I never got the opportunity to dine there. Maybe next time.

Niko only had one request and that was to visit his Uncle, my bother, and we did that on Friday morning. On Wednesday, I took Niko and my mother to Target, as I had to buy a firm pillow for Niko (as all the pillows they had were soft, and Niko is used to his firm pillows). Nina and I are adults, so we can be uncomfortable for a few days, but Niko had a hard time falling asleep on Tuesday (he was also really tired). So, a new pillow, I could fix! As we were wondering around Target, I noticed that Niko wasn’t acting like himself. He was looking to see if that Target had fresh deli sandwiches like ours (it might’ve, but we didn’t find it). Niko then asked if we could lunch at Starbucks, and I was like, NO, but, how about we lunch at Chick-fil-A, and he was happy with that. He has only Chick-fil-A once and enjoyed it. As soon as he had food in his belly, he was back. My poor baby boy was hungry! Oh, as we were turning into the street where Target was, he saw a sign for Bass Pro Shops and asked if we could go, and I said YES. After food, we did Bass Pro Shops, and he wanted to show my mother the elevator! Niko got taffy, and not a boat! After that, he was ready to be done and go back home.

Other than that, we relaxed and enjoyed being with family. It was weird leaving as had we still lived there, it would’ve been about a 45 minute drive home, instead of 7 hours! Hopefully, they will visit us soon.
