The Cooking Dad

I may not know how to cook a lot of things, but I am really good at boiling water for pasta and making omelette’s! I also can cook a frozen chicken thigh or breast in a frying pan and make it really flavorful. Oh, I enjoy cooking frozen dumplings. This morning, I made myself fried rice since we already had as bunch of white rice made. It came out yummy!

You know something, I do like cooking especially now that I have a cooking partner in Niko; he wants to help and I allow him unless it’s not safe.

Before I lived with Nina, I had to take care of myself food-wise and survived; with a little help from my parents. My dinners mostly consisted of pasta, sausage, and spinach. The sausage was able to be cooked in my convection oven.

I am so spoiled and thankful that Nina enjoys cooking for us and I absolutely appreciate everything she does when it comes to food. I thank her all the time and she makes my life easier as I don’t have to worry about cooking.

I don’t just eat and run; I do all the dishes no matter how many are piled up in the sink or anywhere else in the house. One time, at our old old house, Nina made fried chicken and she used every single dish and pot in the house; I laughed. It was really yummy!

Last Wednesday, Nina had surgery and it went very well, but it will take a few more weeks for her to get back to cooking for us. In the meantime and prior to her surgery, she gathered really easy heat and eat food from HEB, Costco, and Trader Joes. She made a lot of rice and a huge meatloaf that we are stilling eating. Yesterday morning, I made myself eggs and threw in some meatloaf; it was yummy in tummy. It’s been fun to rummage through the freezer and see what we got!

I have been off since last Wednesday and will be back at my work on February 12th. I took the time off to mainly be with Niko. Yes, Nina needs my help but not all day long. She is dozing on and off in a very comfortable recliner and has lots of food and drinks next to her. So, basically, what I am trying to say is Niko and I have a lot of time to spend alone and when we go out in the world, I always make sure we eat well! The nice thing is both of our cars have car-seats so I have a choice when we go out; Mama mobile (BIG) or Daddy work car (little). When I take Niko to the San Antonio rodeo in 8 days, we will take the BIG car because I need the big stroller. When I take Niko to Downtown San Antonio on Tuesday, we will take little car because the litter stroller will fit in my trunk.

On Wednesday, the day of her surgery, I came home because I didn’t want to be at the hospital all day. So, for lunch, we had Chinese food; my parents came with us since they were watching Niko when I wasn’t home. On Friday, Niko and I had Mexican food for breakfast/lunch; we breakfast tacos and enchiladas. On Saturday, my parents came over to watch Niko while I helped Nina take a shower. Afterwards, the four of us; not Nina, went to Costco for hot dogs and pizza and I needed milk, batteries, and strawberries. Don’t judge my Costco supplies as I don’t judge your Costco supplies!

In November, Nina had another surgery and that was also my first week of school as I am getting my MBA at WGU. It was really hard for me to do schoolwork after being with Niko all day long. And, I really wanted to quit school! I just had no motivation, was very tired, and my brain was fried from being with Niko. Well, I didn’t quit and have completed two courses and am currently working on my third. I did take a few days off last week, but I am back on track; it’s just writing. I was planning on submitting it tomorrow, but I need a few more days. Yes, the days are long and Niko still breaks my brain, but I work for about 30 minutes to an hour because I have to. It’s actually nice since I can have time alone to work and clear my brain. I want to finish my third class by the end of February.
